PRODUCTION AREA
Lombardy - upper Oltrepò in the
municipality of Montalto Pavese at 410 m a.s.l.
VINEYARD
Monsaltus vineyard. The particles are the
n. 88, 89, 90 of Ha 3.85 planted with Riesling Renano 100% Heinz 65 Mosel clone. The exposure is
north-east and the soils are purely calcareous and chalky and well drained. The plants are
trained in Gujot with 5200 vines/hectare.
Harvest / Vinification
The grapes are harvested
strictly by hand in 18Kg boxes starting from the end of September. The slightly overripe grapes
are pressed gently. Fermentation continues for 30 days.
BOTTLING/AGING
After at least 2 years in steel and
after 12 months of bottle, is ready to be consumed, bearing in mind that it can last even more
than 10 years.
BOTTLE/PACKAGING
Green kidney with cork closure in
vertical boxes of 6 pieces.
Appearance:< /span> intense golden color.
Bouquet: intense and complex, on a background of quince jam, sensations are highlighted of acacia honey, citrus fruits and linden.
Palate: decidedly warm and soft with a natural residual sugar.
Service/ Pairings: Serve at 6/8 °C. A wine of great complexity, taste and smell, which prefers structurally important dishes, for example based on traditional balsamic vinegar. With blue and/or aged cheeses.
