PRODUCTION AREA
Lombardy - upper Oltrepò in the
municipality of Montalto Pavese at 410 m a.s.l.
VINEYARD
Monsaltus vineyard. The particles are
the n. 88, 89, 90 of 3.85 hectares planted with 100% Renano Riesling clone Heinz 65 Mosel. The
exposure is north-east and the soils are mainly calcareous and chalky and well drained. The
plants are trained in Gujot with 5200 vines/hectare.
HARVEST/VINIFICATION
The ripest bunches are
selected and harvested manually in 18Kg boxes starting from the third week of September, the
grapes are loaded into the press protecting them with dry ice. Fermentation takes place in small
stainless steel tanks at a controlled temperature.
BOTTLING/AGING
Starting from the month of March
following the harvest and sold after 30 days in its maximum fragrance.
BOTTLE/PACKAGE
Green kidney with closure Stelvin
in vertical boxes of 6 pieces.
Appearance: color intense golden.
Bouquet: strong aroma of dried apricot, with balsamic notes of sage and thyme.
Palate: Bold entry with a warm and sumptuous sensation.
Service/Pairings: Serve at 4/6 °C. A wine with good taste-olfactory complexity, it goes well with important first courses such as risotto with pumpkin and gorgonzola creamed with traditional balsamic vinegar, shellfish in sauce and Bream onion crepes with rennet apple.
