Lombardy - upper Oltrepò in the municipality of Montalto Pavese at 390 m a.s.l.
The particle is the n. 86 of 3 hectares planted with 100% Pinot Noir with north-west exposure. The soils are calcareous-clayey on marl and sandstone. The plants are trained in Gujot with 4500 vines/hectare.
Harvest / Vinification
Manual in 18kg boxes with soft pressing of the fresh grapes and fermentation at a controlled temperature in small stainless steel tanks.
In the spring following a batch of Pinot Noir, 30% of Riesling Renano is added, the cuvée thus obtained is bottled for refermentation. After 18 months of aging on its lees, it is degorged and marketed.
Champenoise in horizontal box of 6 bottles.
Appearance: pale straw color with greenish reflections , the perlage is fine and persistent.
Bouquet: delicate but decidedly floral and fruity with hints of jasmine and broom.< /p>
Palate: at first fresh impact brings us back to white fruit with notes of pear and pineapple.
Service/ Pairings: it is served at 4/6 °C and due to its great fragrance it is excellent as an aperitif, on raw seafood and with cured meats .
