Lombardy - high Oltrepò in the
municipality of Montalto Pavese at 390 m a.s.l.
VINEYARD
Plot planted with 100% Pinot Noir clone
870 verzeny. The exposure is to the north-west and the soils are of a calcareous-clayey marl
nature. The plants are trained in Gujot with 4200 vines/hectare.
Harvest / Vinification
Manually in 18Kg crates from
from the third week of August with direct pressing of the fresh grapes and
temperature-controlled fermentation in small stainless steel tanks.
TIRAGE/FINING
In the following spring, various
fractions of base wine are assembled, the couvé thus obtained will be bottled for
refermentation. After at least 72 months of aging on its lees, disgorged and subsequently
marketed.
BOTTLE/PACKAGE
Canned Champenoise horizontal of 6
bottles. Magnum boxed in packs of 3.
Appearance: color intense straw yellow with golden reflections, the perlage is fine and persistent.
Bouquet: complex with hints of bread crusts and a evolution reminiscent of the great French champagnes.
Palate: an entrance with great structure, a remarkable persistence and length.
Service/Pairings: Served at 4/6 °C, it is a sparkling aperitif. It goes well with juniper woodcock; excellent with hard cheeses and blue cheeses.
