PRODUCTION AREA
Lombardy - high Oltrepò in the municipality of Montalto Pavese at 390 m a.s.l.

VINEYARD
The particle is the n. 32 of 0.40 hectares on the farm planted in the 1960s with Pinot Noir 100% clone667. The exposure is south-west and the soils are calcareous-clayey in places stony with marl. The plants are trained in Gujot with 3200 vines/hectare.

HARVEST/VINIFICATION
Manual starting from the third week in August with crushing and destemming and subsequent vinification with maceration on the skins. After 4/6 days it is drawn off and the free-run wine thus obtained is sent to small thermo-conditioned stainless steel tanks to complete the fermentation.

TIRAGE/FINING
In late spring, the entire batch of wine from the relative vineyard is bottled for the long fermentation. After at least 110 months of aging on its lees and in its most natural colouring, it is degorged and subsequently sold.

BOTTLE/PACKAGE
Champenoise in horizontal box of 6 bottles.

SENSORY CHARACTERISTICS

Appearance: ruby ​​red color with light orange reflections, fine and persistent perlage.

Bouquet: bright hints of small red fruits, raspberry, blackberry, strawberry and currant.

Palate: always red fruit, ripe and enveloping, slightly bitter. Very persistent and full.

Service/Pairings: Serve at 8/10 °C to fully appreciate all the nuances of Pinot Black. To be combined with red meats, furred game, aged cheeses, excellent with jugged deer.
