Lombardy - high Oltrepò in the
municipality of Montalto Pavese at 390 m a.s.l.
VINEYARD
The particle is the n. 169 of 1.42
hectares planted with 100% Pinot Noir clone 386. Costagrossa vineyard. The exposure is
north-west and the soils are marl-calcareous in nature. The plants are trained in Gujot with
4500 vines/hectare.
HARVEST/VINIFICATION
Manual in 18kg boxes
starting from the third week of August with direct pressing of the grapes fresh and fermentation
and temperature controlled in small stainless steel tanks.
DRAFT/FINING
The base wine is drawn the following
spring. After at least 36 months of aging on its lees, degorged and subsequently marketed.
BOTTLE/PACKAGING
Champenoise in horizontal box of
6 bottles. Magnum boxed in packs of 3 pieces.
Appearance: pale straw color with golden reflections, the perlage it is fine and persistent.
Bouquet: fresh with hints of hawthorn, elderberry, yellow fruit and citrus.
Palate: at first impact it has a fresh-savory taste with fruity and floral aromas on a slightly mineral base that persists for a long time .
Service/ Pairings: it is served at 4/6 °C it is the sparkling aperitif par excellence, it does not disdain refined fish and seafood dishes. Excellent with white meat-based first courses.
