Lombardy - upper Oltrepò in the
municipality of Montalto Pavese at 390 m a.s.l.
VINEYARD
The particle is the n. 33 of Ha 1
planted with Pinot Noir 100% clone R4. Costadelvento vineyard. The exposure is to the north and
the soils are marl-calcareous in nature. The plants are trained in Gujot with 4200
vines/hectare.
HARVEST/VINIFICATION
Manual in 18kg boxes at
starting from the third week of August with crushing and destemming and subsequent cold
maceration for 8/10 hours. The clarification of the must occurs in a natural way, as well as the
fermentation at a controlled temperature in small stainless steel tanks.
TIRAGE/FINING
In the following spring the base
wine is pulled. After at least 24 months of aging on its lees, in its most natural color it will
be degorged and marketed.
BOTTLE/PACKAGE < br> Champenoise in horizontal box of 6 bottles. Magnum boxed in packs of 3.
Appearance: color intense salmon pink, with ruby reflections.
Bouquet: bright hints of red fruits such as strawberry, raspberry, cassis and cherry ripe.
Palate: the red fruit definitely prevails with excellent persistence that closes with pleasant freshness and roundness.
Service/Pairings: it should be served at 6/8 °C. It goes very well with game and game birds, medium-aged and non-aged cheeses disdains first courses with meat ragout.
